The Ease of Epicure

Hello! Welcome to my blog!

My hope is to post a recipe at least once a week, showing how easy it is for vegans to use Epicure Selections' products. I use these products every day, and have been doing so even before I became a Consultant.

I have been a vegan for over 2 years. I made this decisions for a variety of reasons, most of which are not appropriate for this blog. One aspect I will talk about though, is health. Eating vegan is one of the most healthiest ways to eat. You consume no cholesterol, hormones, antibiotics, or (if you eat organic as well) genetically modified foods through your direct diet.

I am going to state this right now: I am not a physician, naturopath, or dietitian. I do not have any academic background in making claims on how veganism will help you lose weight, improve your blood pressure, or prevent any health problems. I can however give you the names of people, books, websites, and papers that will support the above claims. As far as my own personal experience as a vegan and the countless reading materials I have coursed through over 4 years, I can affirm that I have a very healthy diet.

Regardless of if you are a vegan, if you have a friend or family member who is vegan, or if you are just looking for a way to cut down on animal products, this blog will hopefully help to show that it is EASY to be a vegan, while using the wholesome ingredients that Epicure Selections provides.

My other hope with this blog is to help vegans who don't know how to cook for themselves as well. Epicure Selections makes it SO easy for people who don't have a lot of cooking knowledge to make delicious, easy, healthy meals!

So, keeping those two goals in mind, I'm going to start this blog off with something more on the basic side. Here we go!

Tomato Avocado Salad with Chickpeas

2 large tomatoes, chopped into bite-sized pieces
2 avocados, choppied into bite-sized pieces
1 14 oz/398 mL can of chickpeas, drained and rinsed off
2 tbsp vinegar (pick your favorite - I prefer balsamic)
salt and pepper (to taste - I don't use salt and I use the 4 Pepper Blend)

Mix all ingredients in a medium serving bowl. Mash the avocado and chickpeas with a fork to soften and allow them to marinade better. Chill at least an hour before serving

This salad also makes a very good sandwich filler (think tuna salad)!

Like all recipes, this is my preference to making it; if you find you need more dip mix or less vinegar, make it to your own specifications!

Please feel free to email me with feedback, or with recipe suggestions!

Keep Eating!
